While bakery style muffins do take a little more time and have some extra steps, they are absolutely worth it. Double chocolate muffins are a classic muffin flavor, and these bakery style double chocolate muffins are absolutely delicious.
The double chocolate is achieved with the addition of cocoa powder and semi-sweet chocolate chips. The chocolate chips are sprinkled throughout the batter and the muffins get topped with extra chocolate chips before baking. Not only do the chocolate chips on top make the muffins look pretty, but they add extra chocolate flavor to the tops of the muffins.

The sugar that gets added on top before baking helps the muffin tops spread out and gives the tops of the muffins a super unique look and texture that kind of resembles a brownie.

This high heat allows the baking powder in the batter to have a strong chemical reaction, helping create a tall muffin. Now if we were to bake these at that high of a temperature for the whole bake, the muffins would burn. Dropping the temperature by 50 degrees to degrees fahrenheit for the remainder of the bake is crucial to the recipe. When you go to turn the heat down from towont look like the muffins are tall, but rather just that the tops have spread.
The flavors and textures certainly match up to the looks. The muffins are super chocolatey with a delicious crunchy sugar topping and melty chocolate chips. The bottom of muffins are fluffy with a tight crumb, while the tops have an almost crinkley brownie-like look and feel to them. Let muffins cool completely in muffin tin before taking out. To remove from the muffin tin, use an offset spatula to carefully release the muffins. Start by releasing the muffin tops from the pan, then use the offset spatula to release the muffin from the cavity. Be careful not to cut the muffin top off of the muffin when releasing from the pan. If your muffin tin is well greased, the muffins should easily lift out of the tin without the use of the offset spatula, but use it at first to determine how easy they are to release.
